This exquisite dark chocolate bar is crafted from unique Cacao Nacional variety grown in the Santa Elena region, Ecuador. 

Santa Elena's Hot, humid climate and deep soils yields fine flavor cacao. Rich agroforestry in the area Integrates cacao with fruit trees (mango, papaya, banana) and native flora, enhancing unique flavor profiles and supporting biodiversity. The combination of specific terroir (soil, climate, biodiversity) gives Santa Elena's cacao its special character, often described as intensely floral with fruity undertones. 

This batch comes from two farms in Ecuador’s Santa Elena region, selected for their naturally low cadmium levels. One farm is part of a long-term reforestation project in Zapotal, Santa Elena to plant organic banana and cocoa. Today, the project spans 100+ hectares of organic banana and 50 hectares of cocoa, with more growth underway. The result: improved environment, income for local families, and a stronger foundation for sustainable, socially responsible cacao.

The beans undergo a slow, fermentation and sun drying process, followed by a delicate low roast that preserves their natural fruitiness and vibrant acidity. The result is a dark chocolate that’s not just bold in cacao content but complex in flavor: low in sugar, rich in antioxidants, and bursting with robust, nuanced character.

In addition to paying farmers fairly, jcoco donates 10% of net profits to providing additional support to cacao farmers.
